Mint And Garlic Zucchini

Preparation

Take four medium/small zucchinis, thinly slice them (not paper thin, though), and toss them with a bit of olive oil. Season with Kosher salt and pepper, then lay them out on a rimmed cookie sheet and broil them until they're golden brown--about 8-10 minutes or so (keep an eye on them so they don't burn!).

Next, mince up 1 clove of garlic and 6-8 large mint leaves (both should be finely minced).

Mix the garlic and mint with the warm zucchini in a bowl--toss well, and serve warm. This makes a perfect side dish, or even put inside a tortilla, top with white cheddar and make it a meal!
