Baked Tofu Warm Salad

Ingredients

1 tablespoon vegetable oil
1 tablespoon light sesame oil
1 tablespoon sweet chili sauce
2 cloves garlic, sliced
1 cup cauliflower, chopped small
1/2 cup green bell pepper, diced
1/2 cup red bell pepper, diced
1 tomato, in wedges
1 cucumber, sliced
1/2 head lettuce, torn
1 block baked tofu. sliced

Preparation

Wash and tear lettuce into a large mixing bowl. Add tomato wedges, cucumber slices, and baked tofu. Set aside.

In a cold pan, put the garlic, cauliflower, red and green peppers. Add vegetable and sesame oil on top and begin to fry until the peppers are wilting.

Add toasted sesame seeds, vegetarian hoisin sauce and sweet chili sauce, toss. Immediately remove from heat and pour over the cold salad in bowl. Toss very well.

Serve immediately.

TIP: For more of an "Asian" taste, add 1/4 tsp grated ginger at the same time as cooking the vegetables.
