Apple Cinnamon Ice Cream

Ingredients

2 apples, peeled and small dice
1 1/2 Tbsp butter
2 tsp cinnamon
2 cups milk
3/4 cups sugar
2 cups heavy cream
2 tsp vanilla

Preparation

*Ice cream maker insert must be frozen solid*

Its very important that you make the apples first, they will need to cool completely. In a sauté pan, over medium low heat, add the butter and diced apples. Stir in the cinnamon and cook for approx 10 minutes, until the apples are slightly softened. Cool completely!

In a bowl, using a hand mixer, mix the milk and sugar until the sugar is dissolved, a couple minutes.

Using a spoon, stir in the cream and vanilla. With the ice cream maker on slowly pour in the mixture. Allow it to run for about 20 minutes or until it has slightly thickened.

Keeping the ice cream maker on, slowly add in the apples. Allow the ice cream to churn for an additional 10-15 minutes or until the consistency resembles a starting to melt soft serve ice cream.

At this point the ice cream will appear a little bit loose. Shut off the ice cream maker and spoon the ice cream into an air tight container and place it in the freezer. This will allow it to harden and then you can go ahead and scoop away!

I've got a very yummy sweet treat for ya today! I don't care that it isn't 90 degrees out anymore, I am a sucker for ice cream! I happened to have come cream and apples that needed to be used so I figured Jack and I could make some ice cream. I used to make ice cream often but honestly the last time I used the ice cream maker was after I smuggled some Amalfi Coast lemons home from Italy in July of 2008! Let me tell ya, that was the most AMAZING lemon sorbet ever!!! There is nothing like those lemons!

So, back to the ice cream... this one is full of tender sweet cinnamon apples from a local orchard. One of my absolute favorite things about Fall is going apple picking and every year I end up with probably more then I really needed! No problem, this forces you to think of new things to do with them and I think thats a good thing
