Bite-Size Xocai Mini Tarts
one 4 oz package of instant sugar-free vanilla pudding mix
1 3/4 cups skim milk
2 cups whipped topping (sugar free)
1 Xocai X Power Square, grated
Prepare and set aside 2 mini muffin pans lined with mini muffin paper cups. Between 2 pieces of waxed paper, slowly roll out each X Powerhouse Cookie until it is flattened to 6 inches in diameter. With a 1-inch floured round cookie cutter cut each X Powerhouse Cookie into 12 small circles. Reserve crumbs. Place cut-out X Powerhouse Cookie in bottom of paper muffin cup. Set aside. In a medium-sized mixing bowl, add pudding and milk. Mix with a whisk by hand for 1 minute, then fold in reserved Powerhouse Cookie crumbs. Spoon 1 tbsp. of pudding onto each X Powerhouse Cookie lined mini cup. Top each tart with a dollop (1 tsp) of whipped topping. Sprinkle grated X Power Square over top of each mini tart. Freeze at least 1 hour or until frozen before serving. Remove from freezer 10 minutes before serving.
Variation: Use chocolate whipped topping with a slice of strawberry on top.
