Greek Feta & Herb Popovers
While my husband was cooking away at our lovely Greek Chicken Lemon Soup with Orzo I was on the other side of the kitchen baking some wonderful little Greek Popovers to serve with it. I sure do love these little light and fluffy bites. The popovers paired extremely well with this soup and I am sure they would go great with anything you wanted to serve them with. I made a simple little sauce that I served on the side that my husband just loved.

- 3 teaspoons Oil
- 3/4 cup Milk
- 1 Egg
- 1 Egg White
- 3/4 cup Flour
- 2 teaspoons Chives
- 2 teaspoons Parsley
- 4 ounces Feta Cheese (cut into 24 cubes)
- 2 tablespoons Mango Chutney
- 3/4 cup Vanilla Yogurt
- Cooking spray
Instructions
Step 1
Prepare the muffin pan: Spray 24 mini muffin cups with cooking spray. Place the muffin pan on a cookie sheet. Add 1/8 teaspoon of oil to the bottom of each cup.
Step 2
Prepare the batter: In a small bowl, combine the milk, egg, and egg white. Mix well using a whisk. Add the flour, chives, and parsley, then mix until just combined.
Step 3
Preheat and warm the pan: Warm the cookie sheet and muffin pan in a 425 degree oven for about 5 minutes.

Assemble and bake popovers: Once the pan is heated, carefully remove it from the oven. Divide the batter evenly among the muffin cups. Place one cube of feta cheese on top of each serving. Bake for 18-20 minutes or until golden brown.

Prepare mango sauce: While the popovers are baking, mix the mango chutney and vanilla yogurt together in a small dish. Refrigerate until ready to serve.
Step 6
Serve: When the popovers are done baking, remove them from the oven and then from the muffin pan. Serve warm with the prepared mango sauce.
