Greek Feta & Herb Popovers

While my husband was cooking away at our lovely Greek Chicken Lemon Soup with Orzo I was on the other side of the kitchen baking some wonderful little Greek Popovers to serve with it. I sure do love these little light and fluffy bites. The popovers paired extremely well with this soup and I am sure they would go great with anything you wanted to serve them with. I made a simple little sauce that I served on the side that my husband just loved.

Ingredients

3 teaspoons - Oil
1 Egg
2 teaspoons - Chives
2 teaspoons - Parsley
4 ounces - Feta Cheese ( cut into 24 cubes)

Preparation

Spray 24 mini muffin cups with cooking spray, place the muffin pan on a cookie sheet. Add 1/8 of a Tsp. Oil to the bottom of each cup. In a small bowl combine the milk, egg and egg white, mix well using a whisk. Add the flour, chives & parsley then mix well. Warm the cookie sheet/muffin pan in a 425 degree oven for about 5 minutes, once heated divide the batter between the muffin cups. On top of each serving place a cube of feta cheese and bake for 18-20 or until golden brown.
