Carrot Curry With Rotis

Ingredients

cup Carrots - grated or cut vertically - 1.5
small Onion - 1 chopped
Few curry leaves
cup Coriander - ¼ chopped
tablespoon Turmeric Powder - ¼
tablespoon Chilli powder - ½
tablespoon Lemon juice - 1/24 optional
For tempuring :
tablespoon Oil - 2-3
tablespoon Urad Dal / Chana Dal - ½
tablespoon Mustard Seeds - ¼
tablespoon Cumin Seeds - ¼

Preparation

Heat oil in a non stick pan add the chana or urad dal, mustard seeds, cumin seeds and let them splutter.

Then add chopped onions, turmeric powder , chopped corainder and fry till the onions are translucent.

Now add chilli powder , salt and fry.

Then add carrots and saute well.

Cook covered on low-medium heat for 10-15 mins until the carrots are cooked well.

Add lemon juice if you like and garnish with coriander.

Serve hot with rice or rotis/tortillas
