Cilantro Mint Pesto

Ingredients

1 clove garlic, minced
1/2 cup fresh cilantro leaves
1/2 cup fresh mint leaves
2 tablespoons pine nuts
1/2 teaspoon salt
1/4 cup Parmesan cheese, freshly grated
1/2 cup olive oil

Preparation

Add the garlic, cilantro, mint, pine nuts, salt and Parmesan to a blender or food processor and pulse to combine.

Scrape down the sides and blend for 30 seconds.

While mixture is blending, slowly add the olive oil.

Scoop into a dish until needed.
