Easy Turkey Pumpkin Chili
Ingredients
1 medium onion, diced
1 jalapeño, finely diced
1/4 teaspoon garlic salt
1.2 pounds 93% lean ground turkey (1 lb is fine, my turkey comes in 1.2 lb package)
2 10 ounce cans diced tomatoes with green chilies (Ro'tel)
1 cup canned pumpkin
1 15 ounce can Canelli beans, rinsed (great northern beans would work as well)
2 teaspoons garlic powder
1 teaspoon garlic salt
1 teaspoon cumin
1/2 teaspoon paprika
Preparation

Using a large to medium greased pan (at least 3 inches deep) begin sautéing the onion and jalapeño with the 1/4 teaspoon of salt on a low-medium heat.

Once they begin to soften, add ground turkey. Stir frequently until turkey is cooked through and no longer pink.

Add cans of diced tomatoes.

Stir in beans, pumpkin and spices.

Allow to simmer for at least 10 minutes to allow the flavors to deepen.

Serve with a sprinkle of fresh parmesan and a few crackers. Enjoy.
