Chipotle Slaw

Ingredients

cup mayonnaise or vegan mayonnase
1 1/2 tablespoons fresh lemon or lime juice
1/4 teaspoon ground cumin
1/2 teaspoon chipotle chiles in adobo sauce, minced

Preparation

Add the mayonnaise, lemon juice, cumin and chilies to a large bowl. Stir to combine. Add the cabbage, jicama and cilantro. Stir to coat the vegetables. Salt to taste and serve

From "Student's Go Vegan Cookbook." You can use packaged coleslaw (red and green cabbage plus shredded carrots) instead of plain cabbage if you like.
