Parmesan Twice Baked Potatoes

Ingredients

4 baking potatoes
cup milk
1/4 cup butter
1/2 cup grated Parmesan cheese, plus extra for top of potatoes
1/2 teaspoon salt
1/8 teaspoon black pepper

Preparation

Bake potatoes.

Cut each potato in half and scoop out the flesh, saving the shells.

Mix together the potato, milk, butter, cheese, salt and pepper until fluffy. Spoon mixture back into shells. Sprinkle with extra Parmesan.

Return to 350 degree oven for 15-20 minutes, until heated through and lightly browned.
