Simply Succotash

Ingredients

5 ears (cobs)s corn or 2 cans of whole sweet corn kernels
2 cups frozen shelled soybeans (Edamame)
3 tablespoons unsalted butter
1/2 cup green onions, white and green portions, finely diced
1/4 cup Red bell pepper, seeds removed and finely diced
Salt and pepper to taste

Preparation

In a large pot, fill with water and salt and bring to a boil. Or if purchased fresh shelled beans, skip this step and the next.

Boil soy beans for 2-3 minutes or until done. If you are using fresh corn, cut each cob in half so that the halves are flat on the cutting board. Slice the kernels off each side of the cob.

In a separate pan, saute green onions, corn and peppers, in butter until onions are translucent and peppers are softened

Combine soybeans with sauteed mixture and transfer into a large serving bowl.

Toss, add salt and pepper to taste

Serve immediately
