Imitation Crab Salad - Cooking For A Crowd

Ingredients

2 Lg. Carton of Cottage Cheese (24 oz.)
1 small Carton of Sour Cream (16 oz.)
2 pounds Imitation Crab Meat
3 tablespoons Lemon or Lime Juice
3 tablespoons Dried Parsley
2 Bunches of Green Onions Chopped including tops
4 mediums Stocks of Celery Chopped
2 teaspoons Salt
1 teaspoon Black Pepper

Preparation

Fold together Cottage Cheese and Sour Cream

Add Lemon or Lime Juice

Add Dried Parsley

Add Chopped Green Onion and Chopped Celery

Add Salt and Pepper

Fold into Cottage Cheese and Sour Cream Mixture

Add Imitation Crab Meat and fold into mixture.

Chill for several hours and serve on lettuce leaf.

About

This imitation crab salad recipe made with cottage cheese was introduce to me by my friend and co-designer, Kristen Cook.  In the summer, she brought this incredible crab salad to work.  She would actually double this recipe… which is already a large one… and feed the gang.  I don’t think she ever went home with left overs.   The cottage cheese extends the salad and it’s a flavorful addition to the crab.  Besides tasting delicious… it’s good for you… and kids seem to like it equally as well as adults.
