Jicama and Avocado Salsa

Ingredients

1 lrg jicama, peeled and diced
2 ripe avocadoes, peeled, pitted and diced
1/4 cup fresh cilantro, chopped
1/4 cup red onion, diced
1 jalapeno chile, finely diced
Juice of 1 lime
2 tablespoons olive oil

Preparation

Combine all ingredients in a bowl and gently stir. Chill until ready to serve. Serve with tortilla chips. Jicama is a sweet, crunchy tropical fruit. If you cannot find jicama, you may use diced water chestnuts instead.

Chefs Notes:This recipe is fine as is. The avocado has some fat but it is supposed to be the good type of fat.
