Garlic Olive Oil

Place olive oil in a sauce pan over a low heat.

Peel and add the whole garlic cloves to oil.

Keep the temperature low and adjust the heat so that the garlic cloves create very small bubbles.

Leave on heat until the cloves shrink to about half their size and turn dark brown. Be careful to avoid burning the garlic as this will give the oil a bitter flavor.

Allow to cool, remove garlic cloves and return to the bottle the oil came in.

About

This oil can be used to add garlic flavor to salad dressings and as a finishing oil that can be drizzled over a variety of dishes. Use extra virgin olive oil for a stronger olive flavor.
