Curried Chicken Salad

Ingredients

Four boneless chicken breasts cooked, cooled and cut into 1/2" cubes
16 ounces of cooked rotini, rinsed in cold water
1/4 cup of Dijon mustard (or 1 tablespoon of dried mustard)

Preparation

Combine yogurt, mayonnaise, mustard, curry powder, and lemon pepper.

Toss remaining ingredients in a large mixing bowl.

Add the dressing to the mixing bowl and toss to evenly coat. Add salt and pepper to taste.

Refrigerate for at least 6 hours before serving for better flavor!
The raisins can be substituted with dried cranberries.
