Blood Orange Cilantro Vinaigrette
1/4 cup Fresh Cilantro leaves, washed
2 cloves Garlic, peeled and chopped
1 Jalapeno pepper, coarsely chopped
cup fresh Blood Orange juice*
1/2 cup Honey
1 tablespoon Balsamic Vinegar
1 teaspoon Cumin
1/2 cup Olive oil
1/4 teaspoon coarse Black pepper
Place all ingredients except olive oil in a food processor.
Pulse for several seconds, until cilantro and jalapeno are fine.
Add olive oil and pulse for 2-3 seconds more.
Place in a jar and set aside to use within 30 minutes, otherwise refrigerate. This dressing is better as the flavors blend.
