Lisa's Broiled Salmon

Ingredients

Nothing so exact....just put whatever veggies together with brown rice and make
Emmm, this ones my favorite!

Preparation

Extra Virgin Olive Oil in pan over Medium heat, add 2 garlic cloves and red pepper until fragrant;

Add any of the following - green beans, sliced carrots, mushrooms, celery, brussels sprouts, tomato, broccoli - and some leftover wine, cover and cook until reduced;

Add water, fennel, one bay leaf; cover and reduce heat for 3 minutes; add a splash more water and prepared brown rice: Cover.

Spray foil lined baking sheet with PAM Olive Oil and lay salmon skin side down;

Apply salt, pepper and flat leaf parsley as well as juice from a lemon to this side

Flip skin side up and lightly cover with pepper and sesame seeds plus a little lemon juice

Broil in oven on top rack at 500 for 5-8 minutes depending on thickness of fish. Skin will crisp up and be oh so good!

Sit back and enjoy with a glass of white!

Use whatever herbs on hand....I've definitely tried this dish with cilantro, mint, basil, fennel, dill, parsley, chervil, & oregano - separate occasions mostly but i do mix it up every so often.

Use whatever veggies you have in the fridge....very simple to suit your taste!

Cooking with lemon, lime, pineapple, orange, etc.. can all make a huge flavor difference - but only better.
