Banana Cornbread Muffins

Ingredients

11/2 cups flour
1/2 cup cornmeal
2 tsp baking powder
3/4 cup sugar
2 bananas
1/3 cup unsalted cream/butter
2 eggs slightly beaten
1 tsp vanilla
3/8 cup goat milk (any type milk)

Preparation

Preheat oven 350,

prepare muffin pan with a small amount of canola oil just enough to cover.

Combine liquid ingredients except milk

then add dry ingredients

add bananas after mashing separately blend well.

Cook for around 45 minutes,

be sure to use a butter knife or toothpick to check the center muffin.

If it comes out clean they are ready.

This recipe is a modified version of a banana bread recipe that I saw on another blog. I adored the original but I had a few bananas I needed to use. I am a lover of both cornbread as well as banana bread so I saw a way to combine them. I hope you enjoy them also.
