Chocolate Chip Cherry Muffins

Ingredients

1 + 1/4 cup of Cherry Yoghurt
2 eggs
1/3 cup Butter, melted, allow to cool to room temperature
1/2 cup Cocoa
1/2 cup Caster Sugar
1/2 cup Chocolate Chips
1 + 1/2 cup Plain Flour
1/4 tsp Salt
2 + 1/2 tsp Baking Powder

Preheat Oven to 200 C or 400 F.

Beat together the eggs, yoghurt and butter. Ensure the butter has cooled down. If it's still hot it could sour the yoghurt and cook the eggs. This.does.not.make.tasty.muffins.

In a separate bowl, sift together the cocoa, flour, salt and baking powder. Mix in the sugar until combined. Make a well in the centre of the flour/sugar mixture and pour in the egg mixture. Stir the mixture until you have something that resembles muffin batter. Fold in the chocolate chips.

Line your muffin tins and fill each muffin case with mixture. I had some big ones and some small ones. I like variety in muffins. Just like people. Some big, some small, but they're all delicious when covered in yoghurt.

Anyway, Bake muffins for 12-15 mins. Allow to cool then transfer to wire cooling apparatus (rack) for further.. cooling.

Spoon a dollop of cherry yoghurt on top, shove directly into your face/mouth region/area.
