Smooth & Creamy Avocado Dip

Ingredients

1 tablespoon Fresh Lime Juice
2 cloves Garlic, finely minced
1/2 Medium Onion, finely minced
2 Chili Peppers, seeded and finely minced (or leave the seeds in for a little bite
1/2 teaspoon Sea Salt (or more to taste)
1/2 teaspoon Black Pepper
1/4 teaspoon Cumin (or more to taste)

Preparation

Heat a small skillet with about 2 tsp olive oil over medium heat.

Toss in Garlic, Onion and chilies. Saute until tender crisp but don’t brown them.

Set aside to cool.

Meanwhile seed avocados and scrape meat out of the shell. Empty meat into a medium size mixing bowl and immediately

Squeeze the lime juice onto it and beat with a hand mixer until mostly smooth. (You must use the lime or else the dip will oxidize and turn brown).

In a separate bowl, beat cream cheese until soft then add to the avocado mixture along with the rest of the ingredients.

Mix thoroughly and scrape into a serving bowl.

Garnish with a dollop of sour cream and a few thin shreds of chili peppers and serve with corn tortilla chips.

You may also use as a spread on a sandwich instead of mayo or as a veggie dip!
