[edit] Preparation

Step 1

For the pastry dough - Chill the butter in the freezer for 15 minutes or so and cube it into small pieces. In a food processor, add the flour and the butter cubes and pulse till they mix well. Add the cold water and pulse again. Add the salt and sugar as well. Dump in on a floured surface and mix them together to form a dough like consistency. Do not knead as this may break the butter cubes too much and you will not get the flakiness to the pastry. Cover with a plastic wrap and refrigerate overnight or for an hour. Take it out and roll it out with a rolling pin till its about 1/8 inch thick. Grease a pie/pastry tin and place the pastry dough on it. Press to the edges and trim off any excess dough.

Step 2

For the filling – heat the oil in a sauté pan and add the onions, kohlrabi, pepper and mushrooms to it. Sauté for a couple of minutes.

Step 3

Layer the pastry dough with some feta and goat cheese. Top with the sautéed veggies. Layer again with the cheese. Top with the tomatoes and bake in a preheated oven at 350F for about 20 –30 minutes. Halfway through, add the chopped rosemary on top and finish baking.
