Gluten-Free Cheese Sauce

Ingredients

1/2 cup Oat Flour
2 tablespoons buttery spread (like Earth Balance)

Preparation

Melt butter over low heat in saucepan. Slowly whisk in oat flour until mixture resembles a thick paste. Whisk in 1/2 cup of the soy milk about a teaspoon at a time, stirring constantly. The sauce should look thick and creamy. Slowly whisk in the grated cheddar cheese. Add more soy milk as necessary if the sauce is too thick.
