Beef Kidneys - can actually taste good!

Ingredients

Beef Kidneys
Butter
Onions
Salt and Pepper
(Bacon optional)

Preparation

Select the very freshest beef kidneys you can find (You trust your butcher, don't you?)

Place the whole beef kidneys into a stock pot half full of cold water.

Bring to a boil.

When you see a layer of scummy foam appear on top, drain the kidneys and throw out the water.

Then refill and repeat the process until there's no foam (always starting with cold water).

When there’s no more foam, remove the kidneys and slice them into ¼ inch slices.

Saute with butter and onions.

You can add a few strips of bacon for added flavor.

Salt and pepper to taste.
