Southern Style Black Eyed Peas

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

1 sweet onion, chopped
2 garlic cloves, chopped
1/2 green bell pepper, chopped
1 tablespoon olive oil
1/2 teaspoon bacon salt (yes, it’s vegetarian!!)
1/2 teaspoon liquid smoke
1/4 teaspoon dried thyme
16 ounces cans black eyed peas, drained and rinsed
1/4 teaspoon salt
1 tablespoon brown sugar

Preparation

In a heavy-bottomed pot, heat olive oil.

Add garlic and onion and cook until beginning to soften, about 5 minutes.

Add bacon salt and cook for another 5 minutes.

Add red and green bell pepper, thyme, and liquid smoke. Cook for another 5-10 minutes.

Add black eyed peas, tomatoes, vegetable broth, and salt. Bring to a boil, then reduce heat and simmer for at least 30 minutes.

Add brown sugar and stir to incorporate.

Serve over brown rice.
