Linguine With Shrimp In Tomato, Basil and White Wine Sauce.

Ingredients

1 serv of pasta (I use whole wheat Linguine)
4 basil leaves
1 tablespoon olive oil

Preparation

Bring water to a boil and cook pasta to preference (5 minutes to al dente)

Drain and place aside.

Heat olive oil in a pan over medium heat.

Cook garlic for 1 minute.

Cook shrimp for 4 minutes in same pan (2 minutes each side) and put aside.

In the same pan, sautee tomatoes and basil for 1 minute, pour wine and cook for 8 minutes (the sauce should be reduced to half).

Place shrimp in reduced sauce and cook for 4 more minutes.

Serve over pasta with grated parmesan cheese.
