Quick Chicken and Vegetable Pasta
Ingredients
1/2 small roasted chicken (using the breast and wing meat without skin) You can buy already cooked at grocery
1/2 red onion
small bag baby spinach (washed and torn)
1 large can organic tomato (or fresh if you have them)
fresh garlic, seasalt, ground paper
Whole wheat Pasta (spaghetti, fettichini, or your favorite)
fresh mozerella cheese grated
Preparation

Boil Water for Pasta; add teaspoon salt to water

Meanwhile:

Add the chicken and canned tomato

Add the pasta to the boiling water; cook to your favorite doneness (al dente)

Add spinach to chicken and vegetables stir in to wilt spinach

Drain the pasta add to the heavy pan with the chicken mixture; blend.
