Rosemary and Lemon Botanical Gin

Ingredients

Rosemary and Lemon Botanical Gin
50 ml Gin
15 ml Freshly squeezed lemon juice
15 ml Rosemary Syrup
150 ml Tonic water
Rosemary Syrup
240 g granulated sugar
200 ml water
4 Sprigs of rosemary, leaves removed

Preparation

Pour the gin, lemon juice and rosemary syrup into a cocktail shaker, add some ice, then shake for a few seconds.

Pour into your favourite glass and top up with tonic water.

Serve with plenty of ice, slices of lemon and a sprig of rosemary.

Rosemary Syrup

Heat the sugar and water in a pan until it reaches boiling point and the sugar has dissolved. Continue to boil and stir for 1 minute.

Remove from the heat, add the rosemary leaves and allow to infuse for 10 minutes.

Strain into a jug and pour into a sterile glass bottle.

Rosemary syrup complements the zesty lemon and adds a distinctive woody flavour to the gin.
