Strawberry Jam, Thyme and Vanilla

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.


1 1/2 kilograms little ripe strawberries (I used 800gr)
1 1/2 kilograms of white sugar (I used 700gr)
lemon thyme to taste
juice of 2 lemons (I used 1 large lemon)


Cut strawberries in thick slices, place them in a bowl, drizzle with the juice of 2 lemons and sugar.
Carefully wrap and tape with transparent paper.
Leave to rest for one day to another.
Pour the fruit mixture in a saucepan on very low heat and simmer for 5 minutes.
Remove any foam that has formed and incorporate the seeds of the vanilla bean, and the thyme leaves and stir well.
Let cool for a few minutes and pour into glass jars.
Tightly seal.

The possibility of creating around the scarlet are immense and I believe that a thousand and one ideas have crossed the mind of all those currently participating in the challenge. I was not the exception but the choice fell on a jam I went to try since I saw her. The choice was perfect and so I leave my mark on Red Day
