I took the best looking fruit at the market, peaches and blackberries, puréed them together and strained the juice. A simple syrup with the anise like flavor of Thai basil adds sweetness and a mild herbaceous aroma.

This Peachy Tomato Basil Gin + Tonic is the perfect summer refreshment. Muddled tomato and basil, a hint of sweetness from homemade peach syrup, and all the bubbles have us fighting off this heat with some day drinking.
