Picnic Lunch: Broccoli Apple Slaw

Broccoli Apple Slaw is a delicious side dish to bring to a picnic.   Shredded broccoli (available in the produce section of the grocery store) is combined with broccoli florets, apples, dried cranberries, and onion to make a slaw that is crunchy, sweet, and creamy.  This slaw has mayonnaise so make sure to keep it out of the sun and out of the "danger zone" (40 F-140 F).  Serve this broccoli slaw alongside your fried chicken and cobbler for a fabulous outdoor meal.

Broccoli Apple Slaw


12 ounces broccoli slaw
1 cup broccoli florets, cut into small pieces
1/4 medium red onion, finely chopped
2 mediums apple , chopped
1/2 medium lemon, juiced
1 1/2 tablespoons caraway seeds
2 tablespoons apple cider
6 tablespoons low fat mayonnaise
2 teaspoons sugar
salt and pepper to taste
Mix dressing mayonnaise, sugar, vinegar and caraway seeds in a bowl.
Combine remaining ingredients with dressing and let sit for one hour. This step is important as it softens the broccoli slaw.
