Tasty Chicken Recipe: Crispy 40 Clove Garlic Chicken

Dark meat chicken thighs stand up to 40 —- yes, 40 — cloves of garlic in this recipe from Carnal Dish. The cloves infuse a gentle braising liquid, with plenty of room for the thighs’ skin to get deliciously crispy. The garlic is not overpowering, just perfectly mild!

40 Clove Garlic Chicken


    40 garlic cloves, peeled (can be purchased pre-peeled in large quantitates)
    2 teaspoons vegetable oil
    ½ teaspoon sugar
    8 bone-in chicken thighs, trimmed of excess fat
    Kosher salt and pepper
    2 shallots, finely minced
    ½ cup dry sherry
    ¾ cup low-sodium chicken broth
    ½ cup heavy cream
    2 teaspoons cornstarch dissolved in 1 tablespoon water
    2 sprigs fresh thyme
    ½ teaspoon rosemary, roughly chopped
    1 bay leaf
    ⅛ teaspoon cayenne pepper
    pinch of red pepper flakes
