Must-Have Strawberry Whoopie Pies

Strawberry shortcake is one of my all time favorite desserts.  Erica's Sweet Tooth has baked a version with a twist.  Instead of the classic buttery biscuit, this recipe uses whoopie cakes to hold the filling.  A whoopie pie can best be described as a cake-like cookie, it's soft with tender crumb.  The secret is the teaspoon of white vinegar.  The acidity helps tame the gluten (the protein found in flour) which yields a more tender dessert.  This trick is also used in pie crust to make pie crust and cake.  

Even though these vanilla cakelettes are delicious, the strawberries are the true star of this dessert.  When purchasing them, make sure they are the sweetest, most scrumptious berries you can find.  You really want their flavor to stand out among the rest.  For a more decadent strawberry whoopie pie, substitute the whipped cream for vanilla ice cream.  For full recipe instructions, click here.
