How to Make Gluten-Free Gigerbread Cookies

What is Christmas without a plate of gingerbread cookies?  For those of us who have chosen to abstain from gluten, watching other savor these classic Christmas cookies may be painful to watch.  If you feel like that little something is missing from your holiday experience, fear no more.  This gluten-free gingerbread cookie recipe will allow you and all your other gluten-free eater to participate in this timeless holiday tradition.  Moreover, this recipe is easy enough for even the most novice baker to make because it uses gluten-free Bisquick.  This means that you will not have to run to the store and invest in three different wheat-free alternatives to create a comparable gluten-free all-purpose flour.  To ensure the your gingerbread cookies have the best possible flavor, use the freshest spices available.  I suggest visiting your local spice shop and picking up whole spices and grinding them yourself.  If you decide to do this, purchase a separate grinder from your coffee grinder.  You do not want your Ethiopian Yirgacheffe coffee tasting like pepper and allspice.

Decorating your gingerbread cookies are part of the fun of making the cookies from scratch.  This is an opportunity to get the whole family involved so stock up on a variety of decorating supplies including red and green sprinkles, gluten-free mini chocolate chips, assorted colorful candies, and plenty of royal icing (white, red and green).  Instead of a piping bag, place the icing in a zip lock bag and snip off the corner and decorate.

1 cup butter, softened
1 cup dark brown sugar, firmly packed
1/4 cup molasses
2 eggs
3 1/2 cups gluten free Bisquick
2 teaspoons ground ginger
2 teaspoons cinnamon
1/2 teaspoons allspice
1/4 teaspoon nutmeg
