How to Make Salted Lavender Caramels

Soft and chewy salted lavender caramels are the best homemade gift anyone can receive.  The buttery caramels are laced with a mild floral flavor to create an unforgettable candy.  Making caramels is a simple two step process that only needs a candy thermometer.  First, a simple sugar syrup is cooked until golden brown.  Next, the cream and butter are added and the mixture is brought up to temperature once more.  For first time caramel makers, make sure to read through the entire recipe before starting, make sure you have all the right equipment, and use a reliable thermometer.  Also, the amount of cream affects the final texture of the caramels.  Essentially, the more cream in a recipe, the softer and more taffy-like texture the final product will be.  I suggest trying this recipe as is and adjust it the second time around if necessary.  Once you make salted caramels from scratch, you will be addicted to your own delicious candy.

Ingredients:

3/4 cup of heavy cream
1.5 tbsp Food Grade Lavender
pinch of salt (or a full teaspoon if making salted caramel)
1 cup of granulated sugar
1/2 cup of golden syrup (or light corn syrup)
60g chopped unsalted butter
