Corned Beef Cups and Other Corned Beef Creations for St. Patrick's Day

On St. Patrick's Day, corned beef reigns supreme.  When you prepare it in the slow cooker, on the grill or in the oven, this celebratory Irish dish is a definite favorite on March 17th.  While corned beef is delicious served up with some braised cabbage, it also works well in so many other dishes ranging from nachos, to grilled cheese and even pasta.  These recipes are also a great way to use way corned beef leftovers too.

Corned beef grilled cheese takes the grilled cheese to the next level.  The caramelized onions are cooked in dark beer with butter, mustard and caraway seeds.  You can always add some crisped cabbage to the sandwich too, if you have any on hand.  Fries are an obvious side dish for this dynamite dish.
