Key Lime Macadamia Nut Cookies With White Chocolate Glaze

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

1 3/4 cups flour
1 cup butter, softened
1 tablespoon key lime juice
2 teaspoons lime zest
Glaze:
1 teaspoon lime zest
2 tablespoons key lime juice
1 ounce white chocolate, melted

Preparation

Sift together flour and powdered sugar. Set aside.

Beat butter until creamy.

Add flour, key lime juice, zest, and macadamia nuts. Mix until dough forms.

On a lightly floured sheet of wax paper, form the dough into a 10 inch log.

Roll the log in the wax paper and refrigerate until firm, 2 hours.

Preheat oven to 350º.

Cut dough log into 1/4-inch slices. Place on a baking sheet.

Bake 9-11 minutes or until edges are lightly browned.

Cool completely and then glaze.

For the glaze, whisk all ingredients together.

Add more powdered sugar if it's too runny.

How about Key Lime Cookies? I developed this recipe for my sister-in-law in California who opened a bakery last year. She asked for recipes and I gladly obliged. Out of the recipes I gave her, these are probably the best.
