Hot Pepper Honey

Ingredients

1 cup honey
1 tablespoon red pepper flakes

Preparation

Place honey and red pepper in a double boiler with water.

Bring water to a boil, and bring honey to 190 degrees for 10 minutes.

Remove from heat and allow to cool for 10 minutes.

Strain while still warm and store in a jar just as you would regular honey.

oh, that sounds absolutely yummy...great on a cold snow day, I'm sure. Have you tried with different flavors of honey?

Is there any particular reason that hot pepper flakes are used than, say, fresh peppers? It seems to me that you might get a better flavour that way.

I hate to tell that this is probably very tasty but all honey health benefits lost during heating process also there is some unhealthy stuff created in honey during heat up.
so i suggest try to mix the hot peppers with honey in room temperatures.

You do eliminate enzymes in the honey if you heat the honey over 60ÂșC, but the only claim about ill heath from heating honey is from Yogis.

This is awesome because you taste the sweetness first and then the heat sneaks up on you. It was awesome this weekend on hush puppies and akaras (black-eyed pea fritters, similar to falafel).

About

Hot pepper honey is a wonderful excercise in contrasts as honey is one of the best antidotes for a burning mouth from too much spice. The heat and sweetness are wonderful in contrast with eachother. Use on crackers with cheese or even try on vanilla ice cream.
