Coffee Jelly Canapés

Ingredients

450ml of good quality coffee
3 tablespoon Brandy
100ml Dairy Cream
200ml Milk
9 Leaves of Gelatine
3 tablespoons of brown Demerara sugar
1 teaspoon of Vanilla essence
1 tablespoon caster sugar

Preparation

BEFORE YOU BEGIN

Line a 9 inch banking tin with cling film. Dampen the cake tin to ease the cling film into place.

When layering the jelly ensure the bottom jelly layer is cold and set properly

MAKE COFFEE LAYER

Make 250 ml of a good quality coffee (One cup)

Add 3 tablespoons of Demerara sugar

Add the 3 tablespoons of Brandy (We recommend Somerset Cider Brandy)

Add gelatine

Soak 3 leaves of gelatine in water for 15 minutes. When the gelatine has taken a spongy texture add the gelatine to the warm coffee. Stir until gelatine is dissolved

Pour and set

Pour the coffee mixture into the cake tin.

Fridge and set the Jelly before adding the Milky Coffee layer.

MAKE MILKY COFFEE LAYER

Make 200 ml of a good quality coffee

Add 50ml of milk

Add 3 tablespoons of Demerara sugar

Add Gelatine

Soak 3 leaves of gelatine in water for 15 minutes. When the gelatine has taken a spongy texture add the gelatine to the coffee. Warm over a gentle heat if necessary. Stir until gelatine is dissolved

Pour and set

Pour the coffee mixture into the cake tin and on top of the coffee layer. Ensure the milk coffee mixture is lightly warm and the black coffee layer is cold.

Fridge and set the Jelly before adding the cream layer

MAKE CREAM LAYER

Measure out 150ml of Milk.

Add 100ml of cream

Add 3 tablespoons of Demerara sugar

Add one teaspoon of vanilla essence.

Add Gelatine

Soak 3 leaves of gelatine in water for 15 minutes When the gelatine has taken a spongy texture add the gelatine to the cream mix. Warm over a gentle. Stir until gelatine is dissolved

Pour and set

Pour the cream mixture into the cake tin and on top of the milk coffee layer. Ensure the cream mixture is lightly warm and the other Jelly layers cold.

Fridge and set the Jelly

TO FINISH

To finish cut the jelly into squares.
