Fluted Pumpkin Leaves

The scientific name for Fluted Pumpkin leaves is Telfairia occidentalis. They are very high in beta-carotene content. Approximately 100g of the leaves has 98.9mg of beta-carotene. Common ways of preparing them include blanching and sun or oven drying. Blanching in steam or in a water bath reduces the beta-carotene level less than sun or oven drying does. Refrigeration at approximately 7 degrees Celsius will help to maintain the beta-carotene levels more than storing at room temperature. It is believed by some Nigerian tribespeople that the leaves have medicinal qualities.
