Thyme or lemon thyme will brighten it up. Smoked Paprika or Smoked serranos- will give it an unexpected deep flavor.
Try it with some ground fennel, adds a nice and unexpected flavor.
Also try sorrel if you can get it for a subtle lemon tang.
I love garlic with spinach, especially if the soup involves cream or cheese.
