  • 1 egg for brushing
  • 3 teaspoons dry yeast
  • 25 grams fresh yeast(optional)
  • 2 1/3 cups cake flour
  • 1 teaspoons cardamom
  • 1 teaspoons salt
  • 1/3 cups sugar
  • 1.125 cups milk
  • 1/3 cups butter
  • 1/3 cups margarine(optional)
  • sugar for topping(optional)
  • almond flakes(optional)

Step 1

Warm the milk until it is handwarm. If using fresh yeast, dissolve it in the warm milk.

10 minutes

Measure all ingredients. Add the warm milk (with dissolved fresh yeast if applicable), dry yeast (if not using fresh), cake flour, cardamom, salt, sugar, and butter (or margarine) to a dough kneading machine. Knead the dough for 10 minutes.

30 minutes

Turn off the machine. Cover the dough and let it rise in a warm place for about 30 minutes.

On a baking surface, work the risen dough and shape it into 12 large or 20 small buns.

Place the buns (pulla) on a baking sheet, cover them, and let them rise again for 30 minutes.

Brush the buns (pulla) with the egg. Optionally, sprinkle with sugar and almond flakes.

10-15 minutes

Bake in a preheated oven at 420°F (215°C) for about 10 minutes for small buns, or about 15 minutes for larger buns.
