Tangy Nutty Green Beans

Ingredients

1/2 pound green beans, washed and ends trimmed
1/2 teaspoon t dried dill or 2 fresh
1 1/2 teaspoons olive oil
1 1/2 teaspoons shallots, minced
1/2 teaspoon Dijon mustard
1/8 teaspoon kosher salt
1/8 teaspoon fresh ground pepper
1 1/2 teaspoons lemon juice
1/4 cup toasted walnut pieces

Preparation

Steam green beans in a steamer basket for 7 minutes.

While steaming mix dill, shallots, salt, pepper, and lemon juice.

Whisk in olive oil.

Once green beans are ready, toss into oil mix with walnut pieces.

Taste and add more salt or pepper if needed.

An adamant non-green bean eater said, "I think I might like green beans," when eating these. I think that's a pretty great compliment! Easy and quick, these green beans go nicely with chicken, pork or fish. This recipe has healthy, good fats from the olive oil and nuts that can help one feel fuller. I made a half recipe tonight since I was potentially the only one going to eat this dish. I would suggest doubling if you are lover of green beans or if you are cooking for more then two people.
