Salmon Tartar With Wasabi Dressing


200 grams smoked salmon chopped
200 grams fresh salmon fillet chopped
1 shallot chopped
1 tablespoon chopped chives
1 tablespoon capers


Mix all the ingredients for the tartar. I always add tbsp of soy sauce to give that extra flavour.
I didn’t add any quantities to the dressing as wasabi is quite spicy and some prefer a more liquid dressing than others. What I do, 2 tbsp of mayonnaise, a bit of wasabi and a bit of cream. I stir well and check if it’s spicy enough (god I love tasting, I actually taste so much that I’m often not hungry anymore when my food reaches the table). If it isn’t liquid enough or spicy I add small quantities of both wasabi and cream until I become the perfect dressing.
Serve with a food presentation shape (I don’t know how you call those things, anyone of you?) and draw a line of dressing next to the salmon by using a spoon
