Silvanas

Ingredients

1 3/4 cups finely ground and sifted cashew nuts
1/2 cup milk (2% will do)

Prepare Meringue: Process cashew nuts in a food processor until finely ground, sift and set aside. Beat egg whites, gradually add granulated sugar and flour and beat until stiff peaks form. Fold in 1 cup of ground cashews. Pipe the mixture into circles or ovals onto cookie sheets lined with parchment paper. Bake at 300°F for 25 to 30 minutes or until golden brown. Let completely cool and remove from paper.

Prepare buttercream: Beat softened butter until white and creamy. Dissolve sugar in milk then fold in the remaining ground nuts.

To assemble: Spread buttercream on one meringue and top with another. Make sure the flat sides are facing outside (The opposite of what you would do when making macarons). Then cover all sides with buttercream. Roll in bread crumbs and refrigerate before serving.

Silvanas is a buttercream-filled meringue sandwich similar to Sans Rival. This bite-sized treat is a favorite Filipino pastry. Some prefer having a thicker filling, and you can substitute cashew nuts for macadamia nuts. My family loves this. The hardest step in this recipe is waiting for the silvanas to chill.
