Pickled Onions With Honey Sauce and Black Sesame Seeds

Ingredients

2 cups pickled onions or cocktail onions
2 cups blanched cauliflower florets, (see note)
1 cup blanched broccoli florets, (see note)
1 cup finely chopped cilantro
1 cup finely chopped onion
7 tablespoons olive oil
1/2 cup vinegar
1/2 cup honey
1 pch salt
1 teaspoon prepared Dijon mustard
1 tablespoon black sesame seeds

Makes 8 servings. VEGAN (HONEY)

The black sesame seeds add a slightly nutty flavor to the sauce. Common sesame seeds can be substituted.

SALAD: Drain pickled or cock-tail onions and place in large owl with chopped cauliflower, broccoli, cilantro and chopped onion. Set aside.

SAUCE: Blend all sauce ingredients, except sesame seeds, in a blender until fairly thick. Pour over salad and sprinkle with sesame seeds.

Note: To blanch or parboil raw vegetables, bring a large pot of salted water to a boil. Add vegetables in small batches, cooking only for a minute or two, depending on the vegetable. Scoop vegetables out of pot with a slotted spoon and put into a colander. Run vegetables under cold water or dip briefly into an ice-water bath to stop cooking and keep them crisp and colorful.
