Indian Pumpkin

Ingredients

1 medium Onion
2 cloves Garlic (optional)
Black pepper to taste
1 small Pumpkin,peeled and cut cubes
2 tbsps canola oil
2 cups water

Preparation

Heat oil over medium high heat. Add onion and cook until translucent. Stir in the garlic, curry powder and bouillon cube.

Add the pumpkin cubes, stir for a few minutes and cover. Add after a few minutes add the water. Cook until most of the liquid have evaporated.

Cook the pumpkin till done. Stir heavily.

About

I prefer a sauce-like dish with recognizable pumpkin cubes in it, but lots of people like it as a puree. Serve with rice or bread.
