Strata Polenta


1 package Ready-Made Polenta, cut into 6 slices
1 Fresh Spicy Italian Sausage Link
6 teaspoons Basil Pesto Sauce
4 thin slices of Provolone, about 3-inch wide
4 tablespoons Parsley Leaves, finely chopped


Cut the sausage link in half, then take off and discard the skin. Shape into 4 thin patties, about 2 1/2 inch wide. Cook both sides in a medium-heated non-stick skillet until golden brown, about 4 minutes on each side.
On a microwave-safe platter, place 1 slice of polenta in the center. Top with a teaspoon of pesto, a sausage patty and a slice of provolone. Once again, top with another polenta slice and repeat topping of the other ingredients. Then top the whole thing with a third polenta slice and the last teaspoon of pesto.
Put the plate in the microwave and heat in full power for about a minute or until the cheese is completely melted and sizzling.
Squirt some lemon juice on top. Garnish with parsley leaves and a lemon wedge.




Fancy at first glance. But in reality, the preparation of this dish is much simpler than most traditional stratas. Quick and easy. No casserole needed. And boy! Talk about big flavors.
