Potato Curry With Sauce

Ingredients

1/2 tablespoon cumin seed
1/2 tablespoon black mustard seeds
1/2 tablespoon chilli powder
1 tablespoon turmeric powder
1 tablespoon or 5ml ginger paste
1 large tomato, finely chopped

Preparation

Boil the potato by boiling a pan of water with potatoes in it, bringing to a low boil and cook for 5 minutes then draining the water, set potatoes aside.

Heat the oil in a pan on medium heat for 2-4 minutes. Fry the mustard and cumin seeds until they pop (about 1-2 minutes)

Add the turmeric and red chilli powders and fry for 30 seconds.

Add the ginger paste and fry for 1 minute, if the mixture gets too dry then add a little water.

Add the chopped tomato and fry for 1 minute, stirring constantly

Mix in the potato cubes, along with the water

Reduce the heat, cover and simmer on a low heat for about 15 minutes or until the potatoes are cooked and the sauce thickens, stirring occasionally

Mix in the cilantro and cumin powders and cook for 1 more minute, keeping the pan covered

Transfer the dish to another bowl and its ready to be Served

This curry goes fine with bread, pita bread, Indian Naan and rice.
