Roasted Halibut With Yuzu Passionfruit Sauce

Ingredients

1/2 teaspoon yuzu paste
1 tablespoon honey
1 tablespoon olive oil
1 clove garlic
4 ounces halibut per person

Preparation

1
Preheat the oven to 450*
2
Halve the passionfruit and scoop out the pulp. Press the pulp through a strainer to separate out the seeds. Discard the seeds. Mix the passionfruit juice with the yuzu & honey. Add more yuzu to taste. Add the olive oil.
3
Place the halibut in a glass dish. Thinly slice the garlic and lay over the halibut. Spoon about half of the passionfruit sauce over the top of the halibut and roast for about 10-12 minutes. Cover with foil and continue cooking for another 4-5 minutes. Note: roasting time will vary depending on the thickness of your fish, you will want to check frequently so that you don’t over cook the fish.
4
Remove the fish from the oven and serve, drizzling the remaining sauce over the plated fish.
