Okra & Fish Creole

Ingredients

3/4 cup celery
1/4 teaspoon ground red pepper
1 pound mild fish fillets, ½- 1 ” thick
3/4 cup sliced onion
1 tablespoon olive oil
1/4 teaspoon hot sauce (optional)
Green onions (optional)

Preparation

In large, heavy pot, sauté celery, okra, green bell pepper and onion in hot oil 5 minutes or until tender.

Stir in tomatoes and pepper.

Cut fish into large chunks.

Add to pot, stir well to toss with tomato mixture and cook 6-8 minutes until fish flakes with a fork.

Season to taste with salt and pepper and hot sauce.

Serve over rice.

Garnish with green onions, if desired.
